The Cornish chickens were developed in Cornwall England by crossing the Old
English Gamefowl to Asian varieties of gamefowl. The White Cornish is
one of the varieties used to develop the Cornish Rock which is the primary
hybrid cross used in the production of the worlds broiler chickens. If
you purchase chicken at the super market or restaurant it will most likely
be Cornish Rock. We free range raise our Cornish chickens including
our Cornish Rocks. The free range Cornish Rock hybrid will have more
flavor and better texture than a store bought factory produced bird but will
never be as tasty as the true Cornish breeds. The free ranged Cornish
Rock grow very big quickly and can be dressed at only 8 - 10 weeks for a
very large bird. The true Cornish can be dressed as a broiler at 12
weeks but although very tasty will be a rather small bird. If let grow
to maturity they are an excellent flavored roasting bird. |
